CHOCOLATE CHUNK PUMPKIN BREAD

Prep Time: 30 min - Total time: 1 hour 30 min
Makes 24, 2" squares
2 cups flour
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
2 eggs
1 cup mashed cooked fresh pumpkin
(or 1 cup from canned pumpkin)
1 cup granulated sugar
1/2 cup firmly packed brown sugar
1/2 cup milk
1/4 cup vegetable oil
3/4 - 1 cup chocolate chips
1. Preheat oven to 350 degrees.
2. Spray Pam in 11"x9" dish. Coat with sugar (like you would with flour, but use sugar).
3. Mix flour, baking powder, baking soda, salt and spices until well stirred together and blended. Set aside.
4. Beat with wire whisk until well blended: eggs, pumpkin, sugars, milk and oil.
5. Pour into rectangular prepared dish.
6. Bake 45-60 minutes until knife comes out clean.
You can easily make half this recipe and it still turns out great. Half recipe makes about 8"x8" square pan.
