Lori's Salted Nut Roll Bars



Preheat oven to 350.
Coat a 13X9 baking pan with nonstick spray.
Pulverize 1 pound box nutter butter sandwich cookies in food processor (coarsely crumbled). Add 1 stick unsalted butter melted and process til it clumps together then press in pan and bake 15 minutes.
Meanwhile melt 2 cups peanut-butter chips, 2/3 cup light corn syrup, 4 TBS unsalted butter, and 1 tsp. vanilla, over med-low heat, stirring until smooth, about 5 minutes. Spread 1/2 cup over crumb base.

Top with 2 cups mini marshmallows and return to oven. Bake until marshmallows puff, about 2 minutes then remove from oven (you don't want them to brown or they get crunchy).
Toss 2 cups dry roasted peanuts and 2 cups rice krispy cereal in remaining peanut mixture.

Drop spoonfuls of the topping over the marshmallows, then spread with a spatula (sprayed with non stick spray). Cool bars before cutting
(if you can wait that long, tastes better than Payday!)
